Praise & Glory Muffins--Good & Healthy!!

Ingredients:

1/2 Cup Raisins
1 1/4 Cup of your favorite Gluten Free flour
3/4 Cup Buckwheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup sugar
2 teaspoons cinnamon
1 large tart apple, peeled and grated
1/2 Cup chopped walnuts
1/2 Cup coconut
2 Cups grated carrots
3 eggs
2/3 Cup Applesauce
2 Teaspoons Vanilla Extract (be sure it's GLUTEN FREE)

Prep:

Soak raisins in hot water for about 15 minutes.
Preheat your oven to 350 degrees.

Directions:

In a large bowl, combine flours, baking soda, baking powder, salt, sugar and cinnamon. Mix together.
Stir in drained raisins, apple, walnuts, coconut and carrots.
In a seperate bowl, beat together eggs, applesauce and vanilla. Stir into flour mixture and blend.

Bake 18-20 minutes. Makes 2 dozen muffins.
